Interview With Co-Owners

The news of the closure of the Virgin Mary bar, which opened for business in 2019, comes several months after its co-owners, Nicola and Sarah Connolly, spoke to Hospitality Ireland about their first steps and next moves.

Speaking about the major challenges within the industry at the time of the interview, which was first published in the Winter 2022 issue of Hospitality Ireland magazine, they said, “Like everyone in the hospitality industry right now, we are rebuilding after the tumultuous effects of the global pandemic. We are facing challenges with staffing shortages, along with increases in operating costs due to the inflation of raw materials and energy , but we are confident in the continued and rapid expansion of the AF [alcohol-free] industry, with global consumption of the category now expected to grow by 31% by 2024 [IWSR].”
