Based on the Dundalk Road, Goose is located in the former premises of Indigo / Fuchsia House / The Gables and has undergone an extensive makeover in recent weeks in preparation for the opening. The restaurant is currently taking bookings on 041-6858783, with demand expected to be high.

Speaking to ThisIsArdee.ie, Peter told us what customers can expect from the restaurant.

“It will be quite a different restaurant to what’s around at the minute. It’s going to be exciting, with good value, high quality bistro food. It will be a step above anything in Co. Louth.”

Goose will also house a wine bar which will stock a large selection of good quality wines, which can be bought by the glass.

Peter, 25, is a well respected, award winning chef who has worked in some of Britain and Ireland’s most highly acclaimed restaurants, including Restaurant Gordon Ramsay, 15 by Jamie Oliver, Tom Aikens and Ireland’s only two Michelin star, Restaurant Patrick Guilbaud.

He regularly appears on TV, radio and in newspaper/magazines articles and his Drumcrondra fine dining restaurant ‘Fennel’ has been earning high praise since its opening last year.

In addition to this he has also released two books, with his most recent book, the bestseller ‘Clifford & Son’, paying homage to the food of his late father.

Michael, was highly regarded in the industry and became the first chef in Ireland to earn a coveted Michelin star, for his Clonmel based restaurant ‘Clifford’s’ in Cork. It was after his untimely death that Peter and his family moved to Ardee, where his mother’s family were from.

Here, Peter spent many years and admits he always wanted to open a restaurant in the town.

“I remember going to this place with my grandfather when it was The Gables Restaurant. I’ve had my eye on it for a while and decided to go for it this time.”
